Margarita Pie
INGREDIENTS
2 1/2 cups of small salted pretzels, finely crushed
1/4 cup of margarine, melted
1 Tbs sugar
6 cups of nonfat frozen vanilla yogurt, softened
3 Tbs frozen limeade concentrate, thawed(don't dilute w/ water)
1/4 cup of tequila
1 tsp grated lime rind
1 Tbs fresh lime juice
Combine first 3 ingredients in a small bowl, stirring well. The mixture should be moist, but not soupy. If mixture needs more moisture, add more melted margarine. Press mixture into bottom & up sides of a 9 inch pie plate. Put in freezer for 1 hour.
-Combine yogurt & next 4 ingredients in a bowl, stirring well. Spoon into prepared crust. Cover & freeze.
-Let pie stand at room temperature a few minutes before slicing. Garnish with lime slices & serve.
Sex In A Bowl Dessert
INGREDIENTS
1pkg.(14oz.)chocolate cake mix
3 eggs
1 1/4 cup of vegetable oil
2 pkgs. of instant jello chocolate pudding
4 cups of milk(2 cups for each pkg.)
2 8oz containers of cool whip whipped topping
5 heath bar crunch or skors candy bars, chopped into small pieces
a large deep glass bowl/trifle bowl, 2&1/2qt. glass bowl
Follow directions on cake box to bake the cake.
-Follow directions on pudding boxes. Place in 2 separate bowls. Set aside.
-If whip cream is frozen, let thaw & set aside.
-When cake is done set aside & let cool.
-Break up one half of cake & place in bottom of glass bowl.
-Spoon one bowl of pudding over top of cake. Spread evenly.
-Layer whip cream on top of pudding.
-Sprinkle half of the chopped candy bars onto top of whip cream.
-Repeat steps 5 thru 8, layering the ingredients. Once completed, refrigerate until ready to serve.
-To serve use a large spoon with a long handle. Scoop thru all layers & serve in bowls.
Grilled Cheese
This is so simple. I think it's all about the butter.
INGREDIENTS
Italian bread, sliced thin
American cheese (preferably white), 3 slices per sandwich
Salted butter
Slightly overlap 2 pieces of cheese in the center of bread & allow 1/4 of inch of the cheese to hang over top & bottom of bread.
-Layer third piece of cheese on top, in the center.
-Butter both sides of the sandwich.
-Place a couple of slices of butter in pan & set over low heat & melt.
-Cook until both sides bread are golden brown.
Cranberry Sauce
Tom found this recipe a couple of years ago & we love it. It serves 6-8 people so double it if you're having a large gathering.
INGREDIENTS
1 lb fresh cranberries
1 Tablespoon orange zest
1/2 Tablespoon cinnamon
1/ pint orange juice
1 cup packed brown sugar
1 cup of water
Place cranberries & all of the other ingredients in a saucepan. Make sure there is enough water to cover the cranberries.
-Bring to a boil over high heat.
-Lower heat & simmer for an hour or until the sauce has thickened.
-Taste for sweetness, more sugar can be added if needed. Make sure the sauce has a good, thick consistency.
-Let cool slightly before serving.
Sweet Potato Souffle
This is a big hit. I never have any scraps leftover. You can modify the recipe by using less white & brown sugar. It still will taste great.
INGREDIENTS
6 sweet potatoes
1 cup white sugar
1/2 cup milk
1/2 cup melted butter & 1/3 cup melted butter
1 teas. vanilla extract
2 eggs, beaten
1/2 teas. salt
1 cup brown sugar
1/3 cup all purpose flour
1 cup chopped pecans
Preheat oven to 350. Grease large casserole dish.
-In large pot, cover potatoes with water & boil for 20 minutes or until fork tender.
-Place potatoes in mixing bowl & beat on low until they break apart. Increase the speed & blend till smooth.
-Reduce speed & add white sugar, milk, 1/2 cup butter, vanilla, eggs & salt. Mix well.
-Allow potato fiber to remain on beater & remove. Pour mixture into casserole dish.
-In small bowl whisk together brown sugar, flour, pecans, & 1/3 cup butter. Sprinkle mixture over potatoes & bake for 40 minutes.
Chocolate Chip Reese's
This is the easiest cookie recipe of all time. There are only two ingredients & they are store bought. Enjoy them!
INGREDIENTS
one pkg of chocolate cookie dough
one pkg of reese's peanut butter cups(miniatures)
one box of mini baking cups
-Separate baking cups
Unwrap the foil & remove paper from reese's peanut butter minis
-Using a teaspoon, place cookie dough into the baking cups. Do not over stuff. Leave some room at the top of the cup.
-Place baking cups with cookie dough on baking sheet.
-Follow baking instructions on the cookie dough package.
-When removed from the oven, immediately press a reese's peanut butter cup into the center of each cookie.
* Let cool before eating.
Magic Cookie Bar
This one of my Aunt Maria's recipes. She is the Christmas Cookie Queen. I remember when I was young my mom & other aunts all making their specialties & then getting together for a cookie swap. Well, now Auntie Maria bakes all the cookies for the entire family! Each household gets their own large tray that's full of many different varieties. I have no idea how many she bakes. It's got to be well over three hundred. So, here's to you Auntie Maria, it wouldn't be Christmas without your cookie trays. This is an easy recipe that requires very little prep time.
INGREDIENTS
1/2 cup butter
1 14oz can of Eagle sweetened condensed milk
6oz bag of chocolate chips
1 & 1/2 cup of grain crackers (finely chopped)
3/4 oz of coconut
1 cup walnuts (chopped)
9x13 baking or casserole dish
Preheat oven to 350 degrees.
-Place butter in baking/casserole dish & put in the oven until melted.
-Sprinkle grain cracker over the butter.
-Layer coconut.
-Add chocolate chips as next layer.
-Top it off with chopped walnuts.
-Slowly pour condensed milk over all the entire mixture.
-Bake for thirty minutes.
-Let cool entirely before cutting into small squares.
Chinese Braised Chicken Crockpot Recipe
I'm making this tonight for the first time, so, we'll see how it turns out.
It sounds fabulous.
INGREDIENTS
1(3-lb)chicken, whole or cut up
1 cup chopped onions
1 cup water
1/2 cup lite soy sauce
2 Tbsp. chopped fresh ginger
2 Tbsp. sugar
2 garlic cloves, crushed
salt & pepper to taste
Chinese Relish Ingredients
1 cup scallions, chopped finely
1/3 cup fresh cilantro, chopped
1 Tbsp. fresh ginger, grated
1/2 tsp. sesame oil
1 Tbsp. rice-wine vinegar or sherry
Salt & pepper to taste
Sesame seeds to garnish
-
Place onions in slow cooker; add chicken- if using a whole chicken place breast side down.
-In bowl combine water, soy sauce, ginger, sugar & garlic.
-Pour over chicken & cover & cook on low for 6-7 hours.
-Season with salt & pepper to taste.
-Serve with Chinese relish & garnish with sesame seeds
Lentil Soup Recipe
This recipe is not just for New Year's Day, it's also perfect for cold winter nights. I use a slow cooker (crock
pot) for this recipe. I put it on low heat for 6-7 hours. You can also
cook it on your stove top in a large stockpot over medium heat, stirring
constantly. Once mixture boils, cover, and reduce the heat to low. Cook
until lentils are tender.
INGREDIENTS
1&1/2 cups of dried lentils
6 cups of water
1 cup chopped onion (medium onion)
1 cup chopped green pepper (medium pepper)
1 cup chopped celery(2 medium stalks)
1 cup scraped & chopped carrots(2-3 carrots)
7 garlic cloves (minced)
1/2 cup fresh parsley (chopped)
1 tsp of fresh ginger (grated)
3 bay leaves
1 TBS dried basil
1 TBS dried thyme
1 TBS dried oregano
1/4 tsp of tabasco sauce
2 TBS of soy sauce
1 cup fresh grated Parmesan cheese
salt & pepper to taste (I use a mixture of sea salt & garlic salt)
Combine all ingredients in your slow cooker or stockpot. Cook until lentils & veggies are tender. Pull out bay leaves before serving.
